ISSUES in HEALTHCARE - Type 2 Diabetes
The most common kind of diabetes is Type 2.   It usually appears in middle aged adults.  This type of diabetes is linked with obesity.  It is
possible to delay or control Type 2 diabetes with diet and exercise.   Actually, two risk factors for diabetes are obesity and physical inactivity.  
Type 2 diabetes can go undetected for many years and if untreated, can lead to serious medical problems and even heart disease.

Unique traits of the Type 2 diabetic:

Type 2 diabetes develops when the body cannot produce enough insulin and uses that lacking supply of insulin inefficiently (Insulin resistant).  
It seems to be like a double edged sword that is responsible for about 200,000 deaths in the United States every year.  Another problem is the
fact that many people with Type 2 diabetes don't know they have this disease.  Unknowingly, people affected with type 2 diabetes are developing
an assortment of complications that could be controlled.

Characteristics of the Type 2 diabetic:

Over the age 45;  are overweight;  are African American, Latino/Hispanic American, Native American, Asian American or Pacific Islander; and
They may have a family history of the disease.

People with type 2 diabetes are more often associated with the following lifestyle:

Being obese (about 50 percent of men and 70 percent of women who have diabetes are obese);
Being insulin resistant (about 90 percent of patients have insulin resistance);
Having a sedentary lifestyle which means not involving significant physical activity;
Having low HDL ("good") cholesterol levels and high triglyceride levels; and
Having an increased prevalence of high blood pressure.

Every day becomes a challenge for those people afflicted with diabetes.  They must control their blood sugar levels in order to help minimize or
even prevent the onset of serious life-threatening health problems.  The most devastating risk factor in diabetics is the development of heart
disease.


DIABETES SELF-MANAGEMENT

Fresh Strawberry Soup

4 cups fresh strawberries, hulled
1/2 cup orange juice
1 1/2 cups low-fat buttermilk
1 cup low-fat vanilla-flavored yogurt
1 tablespoon granulated sugar
1/4 teaspoon ground nutmeg
Sprigs of fresh basil or mint (optional)

Reserve a few strawberries for a garnish, then place the rest in a food processor or blender and purée until smooth.

Add the orange juice, buttermilk, yogurt, sugar, and nutmeg and process briefly.

Refrigerate until time to serve. Ladle into soup bowls and garnish with reserved strawberries and a sprig of basil or mint.

Preparation time: 15 minutes (plus chilling time)

Yield: 6 servings-serving size: 1 cup
